Morels abandonned in a roastbeef shadow

It is famous, morels often grow where we are not expecting them. They grow up very well in the mashed sweet potato with who they constitute a very refined couple, very glamor...

Ingredients for 4 persons :
1 bocal of morels
25g of butter
1 shallot
½ lemon
1 tablespoon of flour
10 cl of water
2 cubes of roast juice
1dl of white wine
2 or 3 oranges mashed sweet potatoes (portion of 200g/pers)

Prepare the morels sauce during the beef cooking.
The sauce : in a frying pan, melt 25g of butter, add 1 shallot and the juice of ½ lemon.
Cook for a few minutes. Pour 1 tablespoon of flour, mix quickly while adding 10 cl of water. Add 2 cubes of roast juice. Cook over low heat for 20min, don't forget to mix time to time. At the end of the cooking, add 1dl of cream (25%), you can serve.
Warm the orange mashed sweet potato in the oven at 200°C for 10 minutes.
Present the beef, with the mash as a side dish and a ramekin of morels sauce.
