Mackerel, where are you ? What are you doing in your papillote !



Between firm fleshes, mackerel and plantain understand each other. A strong alliance with, ginger and dill.

Ingredients for 4 persons :
4 small onions
1 teaspoon of rapeseed oil
312g of sweet plantain
312g of orange mashed sweet potato
2 pieces of fresh ginger (around 4 cm each)
1 bunch of dill
4 mackerels cleaned and scaled
Salt, white pepper
2 teaspoons of leamin juice
Preparation : aluminium foil, oil

Peel and chope the onions. Cook them in a very hot oil until they are translucent.
De-freeze the sweet plantain in 3 minutes in the microwave. Cut them in swigs and put them with the onions. Peel the ginger and clean the dill. Chope them and add them to the mixture plantain-onions.
Clean the mackerels. Make 3 incisions on the skin, on each side. Add salt, pepper and lemon.
Preheat the oven at 220°C
Spread out the amoratic preparation, then put the mackerel on each aluminium foil.
Cover the fish with the rest of the preparation. Add salt and pepper. Close all the papillotes. Put it in the oven aound 20 minutes.
Serve it with a portion of orange mashed sweet potatoes.
