Plantain Gaspacho

The energising cold soup ready in 15 minutes

Ingredients for 4 persons :
1 onion
1 shallot
2 garlic cloves
50g of ginger
30g of celery
30g of oil
1 tablespoon of sugar
1 tablespoon of cider vinegar
2 tablespoons of curry
312g of sweet plantain (1 unit)
400g of soy cream
1 L of skimmed chicken bouillon
2 tablespoons of chopped corriander
Salt Pepper

Cut the onion, the garlic, the shallot.
Warm the oil in a frying pan. Cook the onion, the garlic and the sallot. Add the celery, and the ginger. Cook the whole for a few minutes. Spray with cider vingare.
Add sugar while your mixing. You can also add the curry and the sweet plantain cut in small pieces.
In a faitout, spray the chicken bouillon, and put it in the last preparation. Boil it. Then bring to the boil the preparation for 15 minutes. Add the soy cream and cook it for 5 minutes.
After the cooling, mix everything (If you prefer a soup without the small pieces). Add the coriander, the salt and the pepper.
