Fish and sweet plantain in a marinade



Perfect for summer, a very fresh meal, good and rich in vitamins.

Ingredients for 4 persons :
1 bag of frozen sweet plantain of 312g
2 grapefruits
2 oranges
1 green lemon
4 white fish fillets
Provencal herbs
6cl of olive oil
Salt
Pepper 5 crushed berries
1 bag of 1g of vanilla from Madagascar

The previous evening, mix the grapefruit juice with the orange juice. Add olive oil, provencal herbs, salt, pepper, and vanilla. Put them in the mixture. Let them in the fridge the whole night, covered with aluminium foil.
The very next day, cut the sweet plantain in slices. Peel the orange and the grapefruit in quarters. Spray with green lemon juice.
Put the slices of fish in the middle of the platter, on a bed of plantain. Organize the grapefruit quarters and the orange quarters all around it. Serve It when It is fresh.
